Lucy Schexsnaider was born in Abbeville, Louisiana in 1906, the second of five children. She moved from Louisiana to Beaumont at 8 years old and able to speak only French. She had already begun her lifelong career of raising a family by helping take care of her younger brothers and sister. She graduated from South Park High in 1924 and went to work for the Phelan Company as a bookkeeper, where she was employed until she married, her lifelong partner and love, Herbert Clubb.
The next 80 years were filled with raising a family and running the family farm. In addition to always feeding farm hands and family, she even fed the German plow farm workers. There was always a pot of coffee, a pitcher of lemonade, canned figs and cookies in her kitchen and a welcome mat on the doorstep. Her large farm table fed many mouths and touched countless hearts.
